Cheese

Stilton: Port
If Posh and Becks were a wine/food combo...(possibly without the cheating nannies though).

Goats' Cheese: Sancerre
Goats' Cheese and Sauvignon Blanc are, to put it bluntly, the absolute bomb. In an ideal world something from The Loire, but New Zealand would also do the job. 

Cheddar, Red Leicester, Gruyere, Parmesan: Medium to Full-Bodied Dry Reds
Hard cheeses go really well with Reds, so something like a Cabernet-blend or even a Rioja would be ideal. If you'd rather stick to the White, a rich Chardonnay wouldn't put you far wrong either.

Smoked Cheese: Gewürztraminer
You're not making your life easy trying to pair smoked cheese, but a fruity Gewürztraminer should fit the bill though.

Camembert: Pinot Noir
Something light and little fruity, found in a nice Northern Hemisphere Pinot, is what you're after here. With soft cheeses that completely take over your mouth, you'll be needing something with a high enough acidity to be able to cut through to your poor wine deprived tastebuds.
 
Brie: Chardonnay 
Pretty much the same as above, you want something that'll make a dent in the powerful cheese. A steely Chardonnay is the perfect candidate.
